The Midnight Snack - Veggi Quesadilla

Yes, it's all about the midnight snack!

Not saying that it's the healthiest thing to do all the time, but once and a while it's ok. For some reason I was seriously starving, maybe it had something to do with not having dinner earlier? Not really sure but I knew that crackers just wouldn't do. Since I can't stop eating Mexican and New Mexican food, I fixed my self a veggi quesadilla (didn't have any chicken around). The last time I had New Mexican food was at lunch so I was definitely over due for some more.

I used a large flower tortilla,
Jack cheese (Oaxaca cheese preferably if you have)
1/2 onion chopped
1/3 green pepper chopped
1 serrano chile chopped
A pinch of ground cumin.
Fresh cilantro chopped
And fresh hot chili powder from the Santa Fe Chile shop. (highly recommended over the store brands where they usually still have the seeds and stem ground up in there too. The stuff from the Chile shop is fresh powder only)

The trick is to not only saute the veggies, but to also fry the tortilla up with olive oil in a pan. This is important because it gets the tortilla golden and crispy. Then add all the ingredients, fold over the tortilla and bake it in the oven on 400 until the cheese melts. Take out, cut it into thirds and serve at once!!

Please note: with the serrano chile in there ,it does have a small kick to it, if you like things more on the mild side, you may want not want to add as much in there or any at all.

Although that DOES sound delicious. Well done on actually being able to cook, too. I hope you made sure it had plenty of the hot chili powder? No point if it doesn't have a little kick to it ;) Mexican food in the Northeast can be very good or very not so good, although right on campus we have a couple of places that make some of the best (and cheapest) burritos you could ever imagine...
